Here is that yummy cake recipe for everyone who wanted it. I think it is a great cake for fall.
Chocolate Pumpkin Cake
1 1/2 cups flour
2/3 cup cocoa
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup buttermilk
1 cup canned pumpkin
2 teaspoons vanilla extract
3/4 cup butter, softened
1 cup dark brown sugar
1 cup granulated sugar
3 large (plus one yolk) eggs
1. Line the bottoms of two 8-inch cake pans with parchment paper and lightly butter.
2. Sift the flour, cocoa, baking powder, baking soda, and salt together. Stir the buttermilk, pumpkin, and vanilla extract together in a small bowl. Beat the butter and sugars together using an electric mixer on medium speed until light and fluffy. Beat in the eggs and yolk, one at a time. Reduce mixer speed to low and alternately beat in the flour and buttermilk mixtures in thirds.
3. Pour the batter into the prepared pans. Bake until a tester, inserted in the center, comes out clean--about 35 minutes. Cool layers completely before icing.
Frosting:
6oz. cream cheese, softened
1 1/2 cups confectionars sugar
2 1/4 tsp cocoa
1/4 tsp cinnamon
3/4 vanilla
In separate bowl beat 1 1/2cups heavy cream and 3/4 cup confectionars sugar and scant 1/4 tsp orange food color. Add rest of ingredients. Use 1 cup between layer and rest for frosting cake.Chill 30 min.
Glaze:
4 oz bittersweet choc
1 Tbs cold butter
3 Tbs corn syrup
1/2 cup heavy cream
Bring cream, syrup and butter to boil, pour over choc. Let stand 3 min. and whisk smooth. Cool 3 to 5 min. and pour over top of cake.
